I need to piece together my directional background fabric for my quilt. Which way should i piece my seam Vertical or Horizontal?

Are you asking about the Back of the quilt? If so, whichever puts the design the way you like it best. I usually prefer a vertical orientation when using a stripe-type design.

It depends on how it's being quilted as well. If you have someone quilt it on a long arm, they'll be very appreciative of a horizontal seam for the backing. I have been known to cuss out a vertical seam before if the selvedge edge wasn't removed first and it's tight on that vertical seam - that can cause ripples along the edges if you can't keep it tight enough at the edge when it's too tight in the middle. There can also be puckers in the back.
If you're referring to backgrounds on the front, it's however you like the look to be. Sometimes I keep everything the same direction and sometimes I spin the pieces, so some go vertical and some horizontal.
